Instant Pot “Baked Beans”

We can probably agree that a good round of baked beans is pretty darn awesome. Tasty, with a bit of sweet, probably some bacon, and filled with beans (good protein source!). Now what if I want a smaller amount or don’t have the time it takes to make traditional baked beans? Enter the Instant Pot! I love this handy kitchen gadget, from spaghetti to hard boiled eggs to rice to baked beans. It really is super useful. I tried a different version of this a while back and I wasn’t happy with it, to thick and the flavor wasn’t right. I tweaked and fiddled and came up with this version and I am soooo much happier with it. Hopefully you’ll enjoy it too!

Instant Pot “Baked Beans”

Servings – 6 to 8

Ingredients

  • 2 cans pinto beans, drained and rinsed
  • 1/4 cup packed brown sugar
  • 1/4 cup maple syrup
  • 1.5 Tbsp yellow mustard
  • 1.5 tsp Worcestershire
  • 1/2 tsp salt
  • Black pepper to taste
  • 4 strips of bacon, diced
  • 2 tsp chili powder
  • 8 ounce can tomato suace
  • 1 small onion, diced
  • 1/4 cup water

Directions

  1. Press saute on your Instant Pot. Once hot, add bacon and sauté until almost done.
  2. Add onion and sauté until translucent.
  3. Add everything else, stir together.
  4. High pressure for 10 minutes and nature pressure release for 10 minutes. Carefully release any remaining pressure.
  5. Serve and enjoy!
